To change the domain name just purchase the new domain name and open a ticket with the help desk and ask the techs to change your domain name to the new name and park your existing domain on top of the new domain. When the old domain name expires you then wouldn't have to renew it.

Upload the backup you made and open a ticket with the help desk and ask them to import it into a new database for you.

Maybe you should open a ticket with the help desk and have then take a look at it. I find it strange that you can't access a table using phpMyAdmin through cPanel.

You can get the raw access log for your domain. You may need to open a ticket with the help desk to get the FTP logs.
