Thought I'd share this quick, easy, and delicious way to use those leftovers:

 

Spread 1/2 to 1 can (depending on quantity of turkey you have leftover) of cream of mushroom soup on bottom of casserole dish. Add Turkey (cut into bite-size pieces). Do not mix. Layer frozen broccoli spears (run cold water over package to separate spears) on top of turkey (you can use asparagus spears if you don't like broccoli). Spread another 1/2 to 1 can of cream of mushroom soup over top. Sprinkle with parmesan cheese. Bake at 350 degrees for 1/2 hour.

 

I make huge amounts of this using a roasting pan for my casserole dish (it sometimes takes an extra can of soup and an extra package of broccoli) and every bit gets eaten.

sounds yummy! :) Copied that down and will try it next turkey.

 

Our Christmas feast is a BRUNCH so no turkey leftovers. And I do love turkey or roasted chicken pieces in gravy poured over mashed potatos. Simple leftover that everyone has done.
