Virtual Imager Posted December 26, 2004 Posted December 26, 2004 Thought I'd share this quick, easy, and delicious way to use those leftovers: Spread 1/2 to 1 can (depending on quantity of turkey you have leftover) of cream of mushroom soup on bottom of casserole dish. Add Turkey (cut into bite-size pieces). Do not mix. Layer frozen broccoli spears (run cold water over package to separate spears) on top of turkey (you can use asparagus spears if you don't like broccoli). Spread another 1/2 to 1 can of cream of mushroom soup over top. Sprinkle with parmesan cheese. Bake at 350 degrees for 1/2 hour. I make huge amounts of this using a roasting pan for my casserole dish (it sometimes takes an extra can of soup and an extra package of broccoli) and every bit gets eaten. Quote
